Irresistible Chocolate Brownie

Our favourite brownie recipe. This is a delight for chocoholics of all ages: it’s a not-too-sweet sweet treat.

It is a very easy, quick recipe, ideal for novice bakers. I think I’ve baked it so many times I could do it blindfold so now I delegate: my teenage daughter weighs and mixes the ingredients, the two younger ones help with the washing up: the bowl and spoon are always licked clean!

And … once it is in the oven … the house smells divine!

Irresistible Chocolate Brownie

A classic recipe for true chocolate lovers, dense, moist and chocolatey.

Ingredients

  • 200g 70% dark chocolate, roughly chopped
  • 175g unsalted butter
  • 175g caster sugar
  • 130g plain flour
  • 3 eggs
  • icing sugar, to decorate
  • Optional: walnuts or pecan nuts, roughly chopped

Directions

  1. Preheat the oven to 180ยฐC. Line a square 20cm/8in” baking tray with greaseproof paper.
  2. Melt the chocolate and butter in the microwave (bursts of max 40 seconds at a time until fully melted and smooth) or by placing in a heatproof bowl over a saucepan of simmering water – don’t let the water get into the bowl!
  3. Remove the bowl from the microwave or from the heat. Add the sugar and stir until well incorporated. Fold in the flour and, again, mix well. Finally stir in the eggs and mix until thick and smooth.
  4. Spoon the mixture into the prepared baking tray and bake in the preheated oven for about 25-30 minutes, or until flaky on the top but still soft in the centre. Don’t overcook! If left too long the edges will become hard and crunchy and the inside will be dry instead of moist and you will lose the delicious “melt-in-your-mouth” taste.
  5. Leave to cool on a wire rack.
  6. Sprinkle with icing sugar and enjoy!
To-die-for once you’ve let it cool down slightly with its slightly crispy top with a sprinkle of icing sugar and melt in the mouth texture! Can keep in a cake tin or an airtight container for 5 days (if you manage to make it last that long!): simply reheat in the microwave to restore freshness and serve with vanilla ice-cream and whipped cream. In warm weather I prefer keeping it in the fridge. Our favourite movie night treat to avoid crumbs everywhere: a scoop of vanilla ice cream in a bowl, brownie bites/crumbs and whipped cream to top it off! Decadently delicious ….
